Introduction to Human Nutrition introduces basic principles of nutrition with emphasis on personal nutrition. Learning objectives include describing basic dietary guidelines and current standards for adequate nutrient intake, translating nutrition science concepts into specific and easy-to-understand dietary recommendations, and thinking critically when describing the relationship between energy intake, metabolism, physical activity, and weight control. In addition, students will be able to explain how diversity and cultural awareness, social and ethical issues and behavior, and psychological factors affect food choices and consumption.
