During the 2007-2008 school year Colorado College requested proposals for dining service providers. Over the summer, CC welcomed the winner, Bon Appetit. They specialize in sustainable food preparation, service, and disposal. They purchase local and organic produce whenever available. Bon Appetit initiated "trayless dining", a program that has reduced food and water waste. Additionally, there is an "EarthTub" composting system in place for the main dining hall, soon to be expanded.
Eat Local Challenge
Each year, Bon Appetit hosts an "Eat Local Challenge", in which all the food served in Rastall Cafe during lunch is grown within 150 miles. Read more about the 2008 event in the Gazette.
